m. jacques' armagnac chicken for French Fridays with Dorie

This is my first link to French Fridays with Dorie.


I did use armagnac (had to buy cognac/brandy because I didn't have any in the house) and it was very good.



The chicken going into the oven.  The house smelled wonderful, the dish was sweet and savory.  The only thing I might do next time (and there will be a next time!) is remove the casserole lid and broil a bit at the end to brown chicken a little more.



The chicken was certainly cooked through and very juicy and tender.  It was a big hit with the family.

    1. Hi Amy. Thanks for the welcome. I decided to get armagnac since I didn't have any kind of brandy/cognac and I have so many dishes to catch up on with you all I thought I'd do the first published one as close to Dorie's recipe as possible. I'm glad I did cause it tastes good by itself, something I can't say for the one other brandy I've tasted. (Now I will admit to really liking Drambuie!!)

    1. Hi Ei, thanks for the welcome. It was a plunge! but a tasty one! I talked myself into the cost by telling myself I'd use it in the quartre-quarts -- but now I know I'll be making the argmagnac chicken again!

  6. Welcome to the group! Great loooking chicken and Armagnac! Did you like the flavor of the Armagnac - I liked it and didn't find it as strong as cognac going down.

  8. Welcome to FFwD! I think running it under the broiler is a good idea. Dorie says something about removing the lid and revealing a lovely brown chicken but mine was white, white, white, except for flecks of pepper:) Still, it was delicious and we loved it!

  10. Welcome to FFwD! My chicken didn't brown either, but I didn't think of the broiler, but I'll try that next time. There's so much to love about this recipe: it's so easy, it smells great, the chicken is moist, and the veggies in the pot makes a whole meal.

  12. What an great intro to FFWD~you did a lovely post ! Your chicken got some nice color to it - we hit the broiler with ours as well. And I loved that first shot with the Armagnac- I used what I had in the house but your beautiful bottle makes me want to sit down and have a drink :) Well done !
